Jordi Roca brings Casa Cacao to Hong Kong

Updated: Aug 24, 2021

Three-michelin-starred chocolate coming to Harbour City

Owned by famed three-Michelin-star restaurant El Celler de Can Roca and operated by pastry chef Jordi Roca, Casa Cacao is launching an exclusive pop-up at the recently opened Cupping Room Harbour City on January 31.

Just in time for Chinese New Year and Valentine’s Day, the pop-up will showcase a delightful range of indulgent chocolates. You will find exquisitely crafted bonbons, bars and as well as hot chocolate drinks.

Casa Cacao

Casa Cacao first opened its doors in 2020 in Girona, Spain. The chocolate-making workshop is actually a long-held dream for chef Roca, who won the inaugural “World’s Best Pastry Chef” award from The World’s 50 Best Awards in 2014. Some of you will recognise him from Netflix’s Chef’s Table series as well.

He and his brothers challenge themselves with the idea of producing their own chocolate. Now, Casa Cacao is a bold concept that combines a chocolate factory, shop and café with the Hotel Casa Cacao on its upper floors, directed by another member of the Roca family, Anna Payet. “We are very happy to make this pop-up in Hong Kong and we hope it will be the first of many to introduce our chocolate to such a sensitive and demanding audience,” said chef Jordi Roca.

Bean-to-bar

A bean-to-bar philosophy in chocolate-making is similar to the farm-to-table movement you see in cooking. Chef Roca and his team source carefully selected cacao beans from Colombia, Ecuador, Venezuela, Peru, the Dominican Republic and India.

After the beans arrive at the workshop in Girona, they are sorted by hand, roasted, cracked and winnowed, then combined with organic cane sugar and cocoa butter. Then it goesthrough the conching process for at least 48 hours in order to ensure a perfectly smooth product.

“Everyone knows that coffee and chocolate is a match made in heaven, but we’re particularly excited about this collaboration because Casa Cacao and Cupping Room share the same philosophy of sourcing high-quality ingredients and showcasing their unique characteristics,” added Teddy Pun, Managing Director of Cupping Room Coffee Roasters.
